What's the difference between the three finishes?

The linocut is bold gouged cut marks in burnt orange over black. The watercolor bleeds warm rust into cool grey with the bare paper left as the lightest value. The flat scandi version reduces the fox to a few clean curves in a muted four-color palette.

Can I get a different scene, like falling snow?

Yes — the direction field takes any variation, such as falling snow, a fox and a hare together, or a version drawn as a tattoo, and the same three finishes render it.
